500 grammes basmati rice
1 large onion
6 cloves
2 cloves of garlic
5 large cinnamon sticks
4 tablespoons of cinnamon powder
6 pods of cardamon
1 vegetable stock cube
Olive oil
Preparation:
Wash the rice and put aside. Heat oil in a medium sized saucepan and fry half of the onion, cloves, garlic, cinnamon sticks and the cardamon. Then add the rice and continue to fry for about 5 minutes. Finally, add the stock and hot water – leave on medium heat for the rice to cook, stir once or twice and then when ready serve.
Chop the remaining half onion, deep-fry until crispy. Use them to garnish the rice.
This rice goes very well with vegetarian dishes and stews.
