Serves 2/4 persons – Prep time 40 mins
Ingredients:
200 gr Sardines
10 gr Fonio (aka Fundai)
2 cloves of garlic
1 sp of peanut butter
1scocth bonnet chilli pepper (or Neneh krow)
½ onions med size
½ tsp of cumin seeds (or powder)
½ tsp of Turmeric powder
Handful of flat leaf parsley
Fish seasoning (or any other of preference)
½ litre of cooking oil (peanut oil or any oil for frying)
Prep:
This prep needs a blender or a mortar and pestle / Marta ordo
- Clean Sardines and take out midday bone and tail (set aside)
- Chop onions into mid size pieces
- Chop garlic into mid size pieces
- Wash and steam the Fonio / Fundai 4 mins then set aside
- Clean and chop your parsley into small to mid size
- Put these ingredients into your blender / mortar and pestle, then blend (roughly not too smooth)
- Then pour into a bowl and add your Fonio / Fundai that you already steamed into this mixture and then add the peanut butter, cumin and turmeric powder, mix well
- Chop your chilli peppers into small size, add your seasoning and mix well
- Time to roll them in mid size ball
- After rolling the fish balls, pour frying oil into your sauce pan (wok) mid high and then fry for 8 mins depending on the size of your fish balls.
Then set aside or ready to eat with your spicy Mango Barbecue Sauce
Spicy homemade Mango Barbecue sauce
Ingredients:
½ small to mid Mango
2 cloves of garlic
½ onions
3tsp of Worcestershire sauce
2tsp of chilli powder (hot)
2tsp Apple vinegar
4 spoons of ketchup
Blend these in a blender then pour mixture in a saucepan and cook on medium heat cook for 15 mins stirring for time to time. Remove from heat, and ready to serve. Note: this should be refrigerated.
